Oregon and Stanford will definitely be up there at top. Then Arizona St, Arizona, Cal, and Utah bring back great players. I would take the Pac 12 over any conference this year.

Tennessee is one of the worst teams in the SEC right now. I wouldn't use beating Tennessee as a useful tool to gauge how good Oregon is against the SEC. Also worth noting. Check out LSU's record against Pac 10 teams. They dominate the Pac 10 more than any other SEC school.

I don't know that I would go as far as to say Oregon was outmatched in last year's BCS game, but Auburn enjoyed a clear advantage in line play which is where most games are decided.
