I tend to handle these case-by-case. For example, if the maximum bankroll is $50 then I will usually take the first $50 in wagers listed. It won't always be possible - sometimes there is no choice but to make the whole post invalid.

What happens after you win the race then?

Winnings are tallied up over both days, Monitor-Tan. The winnings cannot be used as extra funds to bet with on additional races - they just get added to an ongoing amount won. Usable bankrolls remain the same for everyone in each race as posted.
