Mexican Potato Casserole for me.

1 teaspoon olive oil
1/2 lb. beef
2 bell peppers, chopped
1 med. onion, chopped
2 cans diced tomatoes
1 tablespoon cumin
1 tablespoon chili powder
1 tablespoon garlic powder
2 large baking potatoes, sliced thin
3/4 cup cheddar cheese

heat oil in skillet. Cook meat, pepper and onion until meat is done and vegetables are tender. Add tomatoes, cumin, garlic powder, and chili powder. Blend all ingredients.

In 13x9 casserole dish, alternate layers of potatoes and beef mixture. Cover with foil and bake for 40 minutes. Remove, add cheese to top and cook an additional 15 minutes

Chili I started in the crock pot last night. Should be OK tonight, better tomorrow and "the bomb", Fri. and Sat.
Contains kidney beans, mushrooms, onions, ground beef, hot sausage and half a bottle of Old El Paso extra hot salsa. This will of course be accompanied by liberal amounts of garlic bread with extra old Canadian cheddar and liberal amounts of Molson Canadian.
Just don't stand between me and the bathroom the next few mornings. And you probably don't want to follow me there either.
