Black Tip shark is excellent, Mako is good too, both are very meaty fleshed fish. I like to cut into big cubes and marinate for a couple hours, then skewer with veggies for kabobs and grill them.

I never had crocodile but would expect it to be similar to alligator. Alligator is very tasty, always thought it tasted like a cross between chicken and pork. When you prepare/clean the tail meat have to be sure and remove all the gristle and fat, a very nasty taste if you don't do it properly.

I used to manage a seafood restaurant years ago and we had alligator on the menu. It would come in big chunks of the tail meat and had to clean, trim and prep it.
