Not sure if it's a secret, but people often leave out a little bit of sugar. It definitely helps give flavor more body. Never tried chicken livers, but the idea grosses me out a bit. Maybe someday I'll try it. Bolognese is my signature dish - never had a complaint even without chicken livers.

i roll my own meatballs and get some good sausage from the italian store
