Gonna attempt to make beef jerky one of these days.

I would suggest start with a ‘neutral’ marinade like teriyaki, and get the leanest, thinnest cut of beef you can find. Fat is the enemy of beef jerky, because it doesn’t dehydrate, just turns into oil. Good luck!

The question is, what does it take to get a homgenous mixture, and once you do, is you method of scooping them out of the bowl leaving a "dry spot" of chippers?

These are the factors we must address.

I suspect that tedious, almost anal, scoop selection per cookie is the answer.
