LOVE South Park. Moreso the older episodes with the kids at school. It was fairly representative of my youth at school, cursing, trying not to get caught doing hood rat shit, etc. The newer seasons are still funny but don't resonate as well.

These are best milkshakes I’ve ever had .

You all know that 90% of chains use generic products for their shakes ?

even places like Steak ‘n Shake , who choose not to use soft serve for their shakes

or a “shake mix “ which is generic …… even they use regular ice cream, not custard

and even then, their ice cream is infused with greedy amounts of puffed air during processing

so the “overrun” is at around 100 percent !!! , and that’s even for the good ice creams .

overrun means the end product that comes out as it goes from a liquid to a solid

so if you pour 1 gallon of regular ice cream mix into batch freezer , it will give you

approx 2 gallons of finished product, which means 1 whole gallon of that product

that you are paying somewhat high prices for is merely air puffed through the product

and diluting the overall taste as well as texture .

So what do we do here ?

it comes down to 3 things .


1. we use a premium custard , you want at least 10% percent butterfat

2. We lower the puffing effect by getting quality batch freezer made for harder ice cream like custard

This allows us to only get around 20% overrun

(which means all the quality in the world )

3. Having a top of line product sitting in a dipping cabinet at perfect “scoopability” for shakes
which also helps with that “mouth feel” that comes with a premium shake .

By getting product low on stabilizers , making fresh smaller batches , have it being premium
custard with low overrun , we also are setting the 2% milk in the freezer , not until
frozen but to make it super cold . This helps tremendously with the texture .
We are hand spinning our shakes , which is fancy but also way easier than making rolled ice cream
and takes about 2 minutes from start to end compared to 4 minutes for rolled ice cream
