Truth is, not much.

I'm a sous chef, food is my passion. What is typically sold as "chinese food" in north america is a north american creation. Though I speak predominantly for Canada, I'm not entirely sure about the states but I can assume its the same deal.

Alot of asians immigrated to North America in the late 1800s and early 1900s, largely for labor work, in Canada they built the east to west coast railway. After the work dried up many of them turned to cooking a sort of north american/asian fusion cuisine to support themselves, and the tradition carried on. This is why you can go to any small town in the prairies of five hundred people, and it guaranteed has a chinese food restaurant.

Ginger Beef? It was invented in Calgary. Dont believe me? Look it up.

Though this only refers to the cheap buffet/take out style chinese food joints. For those who have REAL chinese food, its a penetrating delicacy, and nothing like you might expect.

Chinese food around here isn't really chinese food. It's American chinese, I would wait tables back in the day at this nice well known resturant around here. And all the cooks in the back were chinese, I never actually saw them eat the stuff on the menu. Were always eating duck, and other shit i havent ever saw in my life.
