What is a good amount of hands...
you have to see on a player to properly judge their tendancies?

The default with PokerTracker is 50.

    Thanks

It depends on what you want to judge. If someone is running a 40/2 after 50 hands you can tell what kind of player he/she is, but you could get into trouble if a player is something a 30/25 and he's just a tag running hot. Things like fold to cbet, fold to 3bet you are going to need a lot more hands.
