    As most of you know, Grandpa Willie Bee and Unca Buzzy are working on a cookbook and a pilot for the Food Network. We will feature many interesting dishes but will have a section on Comfort Foods to get you through those really bad beats -- like the Bills Pats game we saw last night (THOSE KOKPHUCKERZZZZZZ!).

                      Gruene Salsa

                      1 lb. tomatillos, husks off, washed and cored
                      2 cloves garlic, pressed
                      4 serrano peppers, stem and seeds removed, chopped
                      2 avocados, peeled, halved or quartered is fine
                      1/3 cup cilantro, no stems
                      1 lime (juice)

                      Take tomatillos and blanche for 3 minutes in boiling water, drain and let cool. Put in blender, crush 'em. Add garlic, chopped peppers, avocados, cilantro and juice of half-lime, then blend. Add some more lime if it's still too thick, add another avocado if you want it thicker/creamier. Chill for at least an hour, serve. Will keep for several days, but gets hotter with time.

                      Nutrition and vitamins galore in this dip, probably looking at maybe 500 calories total for what should make about two cups if you use two avocados. Lots of Vitamin C in the tomatillos, avocados and Serrano peppers. Also good fiber, iron in the peppers, Vitamin A in the cilantro, avocados and peppers. Pretty easy to make and make ahead to have for dip watching a football game.

                                  Butterfly pork chops, browned in butter with cracked pepper and lemon zest, then baked on a bed of sliced apples, brown sugar and golden raisins, some bourbon drizzled across it all, Served with garlicky cream spinach that is finished off in oven with fresh grated Parmesan.
