    Homemade Bread Question
    I bought a breadmaker a few months back and have made probably 25 loaves. The problem I have is the bread doesn't seem very soft, it's kinda course, rubbery even.

    That's not to say it's not still really good, it is, but if it was softer it would be perfect, so does anyone know how to make your homemade bread bake softer? I've used all sorts of meausrements and adjusted ingriedients accordingly and trawled the net but still no luck.

    P.S. No flaming, it's 2009, breadmaking is cool.

      I've never used one of those machines. Not a good pastry/bread man myself though I have eventually come up with a really good ciabatta recipe and a decent dinner roll mix. My only guess with your current trouble is maybe you're overworking your dough, sign of a true loser. God bless.

            Alas Mr Bee the only thing that can be overworking the dough is the machine...breadmaking machine...including the mixing of the dough.

            I defend your right to call me a loser but please don't accuse me of overworking the dough, I am not a worker over of dough.

              I can't be bothered to take it back Paves, i think it's an ingridient and quantity issue rather than the machine itself.

                        Those little machines aren't worth a shit. I've tried them. If you have some exact recipes and the machines to make large amounts -- 6 loaves, 10 pies -- fine. Otherwise, get your hands dirty. Give me the word and I'll send you a stuffed ciabatta bread recipe that will cause you to get a gumby. Basically a stuffed pizza, but it's a two-day bread.

                            Start using a starter and just bake it in your own oven. The starter takes time to build, days, but you can use it with all different breads.

                                          Various sites are suggesting the softness comes from adding 2 Tbsp of Vital wheat gluten whatever the fuk that is so I'll try it.
