I didnt even knew there was a sauce with these 3 chiles, i have tried something called 3 chiles sauce, maybe its that one. I know in my house its used to be different sauce for different day and diferent protein inside. So maybe pasilla sauce with chicken and veggies, meatballs in guajillo sauce, etc Never forget to throw a bunch of onion and garlic on your sauces my fellaz! You tried black mole right?

Yeah I love black mole, its what I used as an inspiration for this salsa - mole poblano, specifically. I also use a variant of it cut with veal stock as a braising liquid to make a beef stew.
