Should add to that previous post, in terms of Pico De Gallo, just make it on your own, way easier. I just make mine with tomato, jalapeno, red onion, cilantro, and season with lime and kosher salt. One thing a lot of people miss on though, is that if you dont remove the "pith" of the peppers and tomato (the whitish part on the inside of the skin) you will end up with mush. This is where all the moisture of the vegetable (or in the case of tomatoes, the fruit) is contained, as soon as it sits with salt on it for like half an hour you'll end up with soup. Just shave it down as far as you can and go for an extremely fine dice and you will be all good.

This is unsolicited, but thought I'd share my family's recipe, because it is wicked with carbonara. It's a northern Italian recipe, so no semolina:
1 1/2 C AP flour
1 tsp salt
1 tbsp EVOO
1 egg
1 egg white
1-5 tsp water

In terms of carbonara though - it is a coal miners pasta, hence the word "carbon", it was made from ingredients they could take with them into the mines - pasta, cured meat, eggs (which used to be kept fresh), oil, and most importantly fresh black pepper.
I can't provide you with a good pasta recipe, but here is my advice with carbonara: take your meat, ideally pancetta, but bacon works too, and even if you are using porchetta, start with pancetta or bacon anyway. Render it out over medium heat so the fat gets released and you get that nice brown coating on the bottom of your pan, sweat off shallots and garlic in the fat, then re add your meat. Deglaze with wine, then make a basic cream reduction, and then off heat whip some eggs into it and barely cook them. Carbonara, of any kind, is bloody brilliant with peas, and when I serve it, I crack a soft poached egg on top of it. Re-add your meat just before making your sauce, or else it will over cook, but the rendered pork fat makes for an excellent medium to not only brown your shallots, but to also form an amazing layer of flavor you can deglaze.And naturally, fresh pepper here is essential, I rarely use pepper in anything but in a carbonara it is essential.

#49Worlds greatest salsa Pt 1: acquire some great chiles. I'm in canada, so I can only get them dried, I use Guajilo and Ancho for flavor, and Morita for a bit of a bite. I don't like any of this overly spicy, but I do like a bit of a kick, the Morita provides that.

#52Step 2: open up, deseed, and devein the peppers as good as you can, you are going to be roasting these things so any excess seeds can be taken care of later:
Step 3: toast the peppers. cut them open, or break them apart, and make them flat. use a pan on medium heat, no oil, they will start to soften up as the oils get activated and they become very aromatic.
Step 4: Have a pot of hot, but not boiling water, after toasting, soak the peppers in this water for at least 20 minutes.

Step 6: Puree the soaked peppers, seeds removed, with the reserved soaking liquid.
Step 7: Slow roast, then broil tomatoes until hlistered. A grill works as well. Then, puree.

I didnt even knew there was a sauce with these 3 chiles, i have tried something called 3 chiles sauce, maybe its that one. I know in my house its used to be different sauce for different day and diferent protein inside. So maybe pasilla sauce with chicken and veggies, meatballs in guajillo sauce, etc Never forget to throw a bunch of onion and garlic on your sauces my fellaz! You tried black mole right?
