Boil penne pasta in salted water until al dente then rinse with cold water and drain.
Roast off some bell peppers with olive oil, salt, garlic n pepper. Tent with foil then remove skin and slice peppers into bite size chunks. Add into the pasta.
Chop up generous amounts of cilantro, red onions, and chipotle peppers. Throw into the pasta bowl. Combine and hit with salt and fresh ground black pepper. Zest in one lemon, one orange and one lime. Squeeze in a little lime n orange juice. Give everything a good coating of olive oil and pesto. Toss in some capers and horseradish.
You could eat this as is after mixing and chilling or you could buzzerize it with any of the following:
Sliced grilled chicken
Sliced grilled beef
Smoked salmon
Asiago cheese
Blue cheese
Grilled asparagus
