In a saucepan, lightly brown some
stewing beef and mutton. Get each side of the cubed meat seared. Throw in some finely chopped liver, pancetta, shallots, green onions, red onions, bell peppers (all colours), carrots, garlic, and leeks. Brown, stiring constantly.

Add half a bottle of your favorite bold flavoured red wine and bring to boil. Pour in 2 cups beef stock. Bring to boil, simmer 15 minutes. Salt, fresh cracked pepper, thyme and bay leaves go in now. Add a few cups of yellow rice on top, turn the heat way down low and cover. Simmer away, allowing the beef and veggies to cook up into the layer of rice. The rice will absorb all the flavours of the stew. Once you have a cooked fluffy layer of yellow rice, flip upside down onto a huge serving tray.

Oh sweet Jesus is this good! Try this tonight!

Sounds great but to much work. I'll stick with a inch and a half sirloin.

Hey, pal, if you're gonna invest into the meal you gotta go ahead and get a good pinot to complement it. Shiraz is acceptable as well.

It's all about what floats your boat, baby! Have iced tea with it if that floats your boat. if you love good wine though, this is the meal you wanna pair it with.
