    Just ground up some pork
    and made my own hot Italian sausage. Best I ever had no junk and I know who handled it.

    Anybody else do this?

    Sounds a great idea. Would love to make my own mettwurst, but it's severely involved.

        A good home machine is pretty cheap now and capable of doing about 25 lbs at a time. Little bit of work involved. The most intense part I believe is cutting up the pork to get it the right size for the machine.
        Then it is just grinding and adding ingredients. Oh, a little tricky with the casing. You should have two people for that part.

          Nah, man, that's nice that you got a chance to do that. It's nice to not have to worry about all those preservatives and fillers and shit.

            I dont hunt any longer... but we used to kill 2-3 deers per season back home. making deer sausage isnt hard, just follow reg pork recipe. in fact you have to use pork in making deer sausage, deer is too lean

              I use the hell out of mine, sausage to chili ground. I also got my dogs on the BARF diet, wonderful thing, so im also grinding up all kinds of shit for them.

                  Have a ton of friends that hunt, it is a big deal in PA. Many times ate that sausage and it is good. Also have friends that dry and salt the fish they catch. Is that good.

                    What meat did you use for the sausage? Do you have to buy a big butt? Or you got tenderloin?
