    Cooking With Cougar: Black Bean Pork Chili For Puck Off


    Song: Righteous & The Wicked: Red Hot Chili Peppers

    Black Bean Pork Chili

    2# Pork Tenderloin from the meat market
    1 (16 oz.) Jar of Salsa (I used Pace Medium)
    3 (15 oz.) Cans of Black Beans (I used Bush's beans)
    1 Red Bell Pepper (diced)
    1/2 Yellow Onion (diced)
    1 Cup Celery (diced)
    1 Small Can of Tomato Paste

    Spices I used (feel free to change it up a bit to your own taste)

    1 Teaspoon Cumin
    2 Tablespoons Oregano
    2 Tablespoons Chili Powder
    1 Tablespoon Cayenne Pepper
    1 Tablespoon Chipotle Pepper
    1 Tablespoon Garlic or Garlic Powder
    1 Tablespoon Onion Powder
    Half a bottle of Guiness (or your favorite beer)
    1 Bay Leaf

    Cut pork tenderloin into 2 inch pieces, brown over medium heat. Add ingredients and spices. Turn crock pot on low heat and cook for 8-10 hours.

    Serve with tortilla chips, shredded cheese, and sour cream

    I cant stand pork in chili

    just give me good old angus beef baby..

    Yeah...I know in Australia..they use kandaroo to make their chili...but I dont even consider that " chili "

          Never done anything but beef in chili either but I imagine it still works.

          As always Coug's great job.

              For some reason I can't do chili until fall/winter. Guess it's a comfort food thing or football or something. This looks damn good tho.

                    Wal I am a pretty active person, plus I was blessed with a high metabolism. But yeah, I do love to eat.

                    Well I actually agree for the most part. However, football is right around the corner and figured it would be a good time to try it out. It takes a couple of times to really get it right, you won't be disappointed.

                      Thanks for the recipe, cougar. Don't eat red meat any longer, so always looking for ways to turn a 'traditional beef' recipe into something with pork, chicken or fish.

                        Upon viewing 2:48 to 4:27 is blacked out...not sure what happened. All I did was add the beans/spices. Just follow the list of ingredients.

                          You could probably do a pork and chicken combo as well. Try it out Willie B, if you like a spicy chili with a lot of flavor that will give you a little sweat on your brow, this is the one.

                                        Puck, I really wanted to do a tenderloin on the grill but the weather just wasn't cooperating, so I figured better something than nothing. Try this out when college football starts and the weather gets colder.
