OT - any cooks in the hizzouse?
Do people still talk with that dopey Snoop Dogg shizzle? I guess probably not.

Anyway, I have purchased something called Beef Boneless Rib Finger Meat. They have had a sale on it at my local store for the last week and, even though I don't know what to do with it, I finally broke down and bought some.

What can I say? I am a highly carnivorous organism. I can only resist cheap meat for so long.

It just looks like foot-long fingers of somewhat fatty meat. Maybe it's just the meat that comes from between beef rib bones. That would be good. I like ribs and I don't eat the bones anyway.

    Anyone have any cooking tips?

Your assumption of where the cut comes from seems correct, Mudcat. I don't do beef ribs very often, in fact, can't remember the last time I cooked beef ribs. But I'd slow-cook 'em, either in one of those oven bags or on a smoker/grill. You could even do a little of each, start them in the oven for an hour or so depending how much you have, then move 'em out to the grill for another hour, slopping on some sauce and giving them a smoke flavor.

Oven setting should be no higher than about 200°-220° F. Same thing, low heat (below 250°) and off the fire on a grill.

hey mudcat i made the very same thing last night. i think they rip all the meat off of the cows ribcage, leaving the skeleton in tact. Whatever....dee-lissshh. I slow cooked them in a metal pan, covered with foil at 200 for 1:45 with some lemon pepper and sea salt. Then i threw them on the hot grill and basted with them with sauce for about 15 minutes...some good eatin' there boy.

What do you mean? Ive got all the macho horse sh*t I can handle sweating out the Nats over Cinci. Hey FYI, all those words that are underlined in red...that means they're not spelled correctly. Larry Hagman would know that, well before his liver transplant he would've.

Good barbecued chow is gay? If you say so. I'll try to participate in more threads worshiping male athletes. That should macho things up.

I cooked up half tonight and it didn't go particularly well. It wasn't due to bad advice; it was bad execution, I would say. I'll regroup and take another stab in a couple days.

Thanks for those good additional thoughts Patrick.
