        5 min x pound at 500 F......turn oven off....let set in oven about 2hrs(do not open)
        done 125F....internal temp,gl

        make sure to leave it on counter for 4 hrs before cooking it
        you want room temp..first

            4.5lbs X 5 = 22.5 round up so 23 minutes at 500deg.

            Let sit in oven for exactly two hours without touching the door.

            Make sure you take it out the fridge and let it sit at room temperature at least 4 hours before it goes in!!

                350 is too much heat.

                Roast at 450 for 20 minutes to get a nice seer and then at 250 for 30 min per pound.

                  till 130 internal temp

                  Blast it at 450 till fat cap golden brown the drop temp to 375
