Hey Nunya, heres one for you and the fam, as I know you love your good health and shit.




Actual proper court bouillon, I finally nailed it. They taught me this shit in school and I've read about it in books, never got it though because the traditional recipe is far too weak and almost flavourless. This is a 20 gallon batch, but lets say you were doing it at home, heres what I'd do:

A white onion, a couple celery stalks, a peeed carrot (medium dice),
3 or 4 lemons, halved,
Some thyme sprigs,
Parsley stems,
A couple shallots cut in half,
Some whole peppercorns,
A diced leek, rinsed, and add the greens for the chlorophyll, it will brighten up the flavour a bit
Any misc veggie trim you might have that you think will go well,
Bay leaf,

Cover that with a mixture of water and dry white wine, about a 3:1 ratio (or sub homemade veg stock for water if you want to refortify the flavor), bring to a simmer, reduce heat and just let it simmer off for maybe 15 mins or so. At the end, strain, toss in a good amount of white wine vinegar and season liberally with kosher salt.

The amounts listed will yield you a nice 2-3 litre batch, adjust as necessary, and just use some common sense. The key here is to get the nice background armoa of the veggies and seasoning, and to really "overdo" it with the acidity of the wine and citrus.

Reduce it if you want the flavor to concentrate more, and then use it to poach salmon in, about 4 mins will do for a perfect mid rare. Cool it, and then serve it on top of a salad. The flavour once absorbed and allowed to cool and soak in to the fish will blow your goddamn mind. The thing is not to be too shy with the acidity or seasoning in the original liquid, as only a portion of it will be absorbed by the fish.
