    Ran a central kitchen back in the 80s-90s. Bought Canola in 55 gal. drums, fryolator oil, etc.
    My rep liked me, so every month or so he brought me a bottle ( Dregs, unfiltered) XXX from
    their primo vat. Shit was ridiculous. Strickly for dipping bread or tossing over pasta with garlic/herbs.

    1/2 the shit on the market today is counterfeit. Demand far exceeds supply.

    Have you ever used crushed fresh garlic? I use a garlic press and squeeze out some crushed garlic in the hot olive oil.

    Add olive oil, fresh garlic, fresh squeezed lemon juice and of course salt and pepper. Ridiculously good and easy.

    Yup. About 7 mins in the cast iron and it's as good as any restaurant can do.

    Depends on size and cut, but yeah, usually 3-4 minutes per side.
