I will adjust my preference depending on the cut. The leaner cuts should be cooked a little less in my opinion while as the more flavorful cuts should be cooked slightly more.
Fillet mignon- rare
Ribeye - medium rare
Sirloin - medium maybe...

Morton's hasn't been good for steaks since chain was sold to Fertitta.
Souffle is only reason to go to Morton's these days. It is really just a pricier Outback.

Local steakhouse makes a good cut that I get a few times a year when I'm back home:
Center-cut top sirloin wrapped in apple wood smoked bacon (8 oz) $30
It's really the only steak I eat. Might be others that are good, but I'm more than happy with this piece.
