    Dice shallots and add to pan on medium heat with 2 tablepsoons olive oil. Stir in crushed garlic, capers and leeks, salt n ground pepper. Toss and sautee till tender. Set aside and let it cool down a little.

    Lay out a generous portion of smoked salmon and roll the above medley into the fish. Tuck in the ends so as to prevent spillage from the sides. Place 3 of the smoked salmon rolls on a nice bed of coucous and drizzle the dish with a little balsamic vinegar reduction. A sprig or two or grilled asparagus completes this tasty lunch.
