    Albacore Tuna
    Albacore is a highly migratory species. It can be found in the cooler tropical waters, and is always on the move, seeking for best feeding and spawning grounds.Product Characteristics: Due to its white colored meat albacore is also called " the chicken of the sea". As canned product it is quite popular in the States, where it is marketed as "White Tuna". The meat has a somewhat dry of texture, and the taste comes close to the taste of chicken meat.

          The skipjack tuna, Katsuwonus pelamis, is a medium-sized perciform fish in the tuna family, Scombridae. It is otherwise known as the aku, arctic bonito, mushmouth, oceanic bonito, striped tuna, or victor fish. It grows up to 1 m (3.3 feet) in length.
          It is a streamlined, fast-swimming pelagic fish, common in tropical waters throughout the world, where it inhabits surface waters in large shoals (up to 50,000 fish), feeding on fish, crustaceans, cephalopods and mollusks. It is an important prey species for large pelagic fishes and sharks.
          It is an important commercial and game fish, usually caught using purse seine nets, and is sold fresh, frozen, canned, dried, salted, and smoked.
          The skipjack is a kosher fish as it has scales.
          Although the most fecund of the main commercial tunas, the commonest method for catching tuna which involves drawing a large net under an artificial fish aggregation device, is still regarded as highly ecologically damaging because of the high bycatch, including turtles, sharks and juveniles of other tuna species.[citation needed]
          In Japanese cuisine, skipjack tuna is known as katsuo, and is commonly smoked and dried to make katsuobushi, the central ingredient in making dashi (fish stock). Skipjack tuna is also used in katsuo no shiokara. Katsuo is considered to have "moderate" mercury contamination, however, and pregnant women are advised against eating large quantities.

                  Across Japan, quotas are squeezing the supply of sashimi tuna, and soaring prices are reducing demand. In the first quarter of this year, imports fell 24 percent compared with the previous year, according to one recent industry report. Another report says that for all of 2006, household consumption of sashimi tuna fell 20 percent.

                          Future Supply: The stock of Albacore in the Northern Atlantic is considered to be overfished. There is also indication that stocks in the Southern Atlantic of West-Africa are fully exploited and nearing to a situation of over-fishing.

                          On the situation of the albacore in the Mediterranean the opinions seem non-conclusive. Stocks in the Northern Pacific are fully exploited, but in the Southern Pacific they have reached their critical level.

                          It is hard to predict if global albacore resources can support further growth. One reason is the strongly variable catch levels each season in the catching areas, caused by the continuous migration of the albacore species.

                            For those who enjoy eating raw fish, there is no greater delicacy than dark red fatty tuna. Choice cuts of the fish command luxury prices not only in Japan, but increasingly throughout Asia, Europe and the Americas. VOA's Steve Herman reports from Tokyo that over-fishing of prized tuna species is prompting international action to cut quotas.

                            For Japan's sushi restaurants and their customers, the most prized dishes could soon become more expensive and scarce.
