Filets are obviously best by ounce.
Strip is decent.
I prefer Porter or Filet.

Ribeye
It contains the best tasting piece of meat, the spinalis muscle. Also called calotte cut, ribeye cap and other names but it's the best. I always separate it from the ribeye and cook separately.

I have a piece of eye fillet here I could use some cooking advice on.
It's pretty thick and when I did the last one it was almost burnt on the outside and too raw for me still in the middle after maybe 5 or 6 minutes each side.
This time I was going to sear the outside and then turn it down to a lower heat and cook for maybe 8-9 mins per side.
2 or 3 mins and this thing would still be kicking.

I thought i needed to sear first to seal the juices in.
I'm good with a BBQ and cheaper cuts but just never seem to get it right with really good cuts on the stove top. Maybe that's why... Ive been doing it backwards.
