    Ribeye vs Striploin: Who Ya Got?
    Cooking some steaks. My Ribeye vs girlfriends stiploin. Will post pics.

            Not a baller.

            It depends where you do get the steak from.

            Filets are obviously best by ounce.

            Strip is decent.

            I prefer Porter or Filet.

                  Ribeye

                  It contains the best tasting piece of meat, the spinalis muscle. Also called calotte cut, ribeye cap and other names but it's the best. I always separate it from the ribeye and cook separately.

                          looks like your striploin has the spinalis attached, tailed end of the ribeye section tho so real small piece of the spinalis.

                                Couldn't give ya a number. Doing em in pan. But high heat is a definite. Need to sear.

                                                      I have a piece of eye fillet here I could use some cooking advice on.

                                                      It's pretty thick and when I did the last one it was almost burnt on the outside and too raw for me still in the middle after maybe 5 or 6 minutes each side.

                                                      This time I was going to sear the outside and then turn it down to a lower heat and cook for maybe 8-9 mins per side.

                                                      2 or 3 mins and this thing would still be kicking.

                                                            I thought i needed to sear first to seal the juices in.

                                                            I'm good with a BBQ and cheaper cuts but just never seem to get it right with really good cuts on the stove top. Maybe that's why... Ive been doing it backwards.
