    Jibby, I bring my brisket to 202 and then rest it for 3-4 hours. The moisture in this thing was unreal and had some of the most flavorful burnt ends ever.

    It was perfect.

    Fairly basic for my brisket. I like the smoke to do the work.

    Salt/Pepper/Paprika/Roasted Garlic. Combo of hickory and mesquite for wood.

    I get more creative with my pork butts for rubs.

    Finished up early today... some family was over for a late lunch

    smoked chickens and boston butt w/fixens

    old lady is tired... Sammy is stuffed -- been eating too much last few days

    we are taking Sunday off - no guests and not going out... both of us may fast -- fresh filtered water and squeezed lemon juice only
