Every team in the league is required to have a primetime game. They save the good teams for SNF and put trash on MNF and TNF.

Its to save money. Many college hoops games starting doing this a few years ago. Its not worth it to pay them to fly around

The Sunday Night games are chosen a bit differently. NBC gets the 3rd choice, behind Fox and CBS. Those two pick their "Game of the week". Then NBC gets to pick. Every NFL Team MUST play a Thursday Night game. Not every team will play a Monday Night game and some teams will play more than one. Monday Night games are mostly divisional matchups.
