How does that happen? I realize it's a friendly but it still means a lot to these countries. What were the live odds for Ecuador to win down 3-0?

yeah what you have to remember is that in an official match, coach only gets 3 substitutions

but in a friendly, you can have as many substitutions as you want, most times what they do is start their best players in the first half, and replace the whole team in the second, which is why there are so many comebacks

Yes there are more subs, but I thought international friendlies had a max 6 subs which is still a lot

First keeper went out with injury, 2nd keeper saw red card, 3rd keeper had to come in. Ecuador was favorite before the game, Australia huge underdog. Odds were @67 and up. I saw a 67, but I don't have the slightest doubt that it was higher at some places at one point. Losing 3:4 after 3:0 was a surprise, but not such a massive one under these circumstances. Would I have laid money on it? Hell no.

Hell no, it still was a massive comeback, no doubt!
But down to 3rd keeper, being one man less, pregame underdog and in a friendly (lots of changes etc) is at least an explanation for it.
