As a kid many years ago I remember when the deep dish first appeared in Chicago. Long before that we had great thin crust always cut in squares. If that is in fact NY style....well, you learn something everyday. But that is the pizza we had in the neighborhoods in Chicago in the late 50's and early 60's.... and always cut in squares.

Never had any so-called NY pizza cut in squares anywhere. And any NY pizza I've ever had did have a slightly thicker crust than the really thin Chicago generally found in the neighborhood parlors. Go anywhere and ask for a "Chicago Cut" and they should know to cut it in squares.

Most of us I think just always thought of 2 different Chicago pizzas. Deep dish and really thin crust.
Yeah come to think of it that is right - you either had a very thin crusted pizza cut in rectangles or you had a 1-2" thick pie for deep dish/pan style.

God help you if you had two full slices of deep dish in one sitting, was worse than Thanksgiving in terms of fighting off slumber / feeling like a walrus ...

I eat both depending on the mood I'm in, but most days I go for the deep dish. I'm also slightly biased since I live in Milwaukee and Chicago is only about 75 miles away. Lou Malnati's is the best deep dish I've ever had, I pick one up to bring home almost every time I pass through Chicago.
