I can tolerate gin & tonic, but nothing with scotch... no scotch and water, no scotch on the rocks, nothing... I'll choke it down, but seriously... how does anyone drink this?

I drink only scotch sometimes maybe vodka.
If you want to get used to it then you should start with blended and not single malt (black label is what I drink). And to further help you to acquire the taste I would suggest having it with club soda and just a few cubes of ice.
