if Vegas books wanted to they could offer live lines and the stuff that OP mentioned but they just dont want to expose themself to any unnessesary risk.

Live lines give me people an opportunity to hedge and buy back their bets

I'm in Vegas: all books on Strip offer NBA 1st and 2nd halves. They don't offer College Basketball 1st halves, though.
And the only book on Strip that offers NHL grand salami is Hooters

this may sound off the wall but stations casinos offer in game wagering..on some televised games not all....so you can hedge
