Don't know about the "best," JJ, but they do, in general, have as strong predilection for the riskier forms of making a living.
Jews, generally speaking - tho as the PC folks warn us, we can't generalize -are drawn to riskier endeavors than their gentile counterparts. They like living on the edge.
Gamblng in the greater sense appeals to them. You won't find many Jews attracted to, say, traditional banking - far too conservative.
But risky international banking, with your entire business riding on one decision you may make, yes they are there in force.
George Soros, the international money speculator (and finanicier of "democratic" movements worldwide) is a good example, but only one of a long line.
Vegas now is mostly in the hands of Jews, not Mafia Italians. One Jew I used to know told me it was the Jewish idea of paradise on earth. (He meant it disparagingly - Jews love to disparage their own,and their own foibles. Like, in it's unabashed vulgarity and excess, Vegas appeals to something deep in the Jewish psyche.)
