A key factor in setting your own odds is to know exactly how much time is left. I like to use a chess-clock at the start of the second half. If I don't know how much added time there is, 3 minutes is a pretty good assumption.
If you don't know whether there is a score, just look at the dynamic live odds at Pinnacle. As long as they are slowly moving, you know nothing has happened.
If you see a mid-sized jump on the sides odds, be careful. It might mean a player has been red-carded or injured.
