If they have low juice and you need only to pick like 51% winners to hang in there shouldn't there be way more volume? Don't guys want to win or is the traditional American way of betting just too popular?

humanly impossible to wager this time of the year in alot of sports,like tennis, without parlays.a dull time of the year for me in wagering without the action from tennis.
matchbook is great for live wagering like the europeans have for live wagering but parlays[multis] are a must in tennis wagering.

They don't have enough volume to get more volume. Posting offers is hard (unless you are willing to either get stuck with a bad number or get no action depending on how the game moves) and people who just come in and bet often suck liquidity out of the market instead of adding to it. The ability to come in and make a large wager at any time is the biggest advantage a sportsbook has over MB.Comment -

matchbook does allow you to bet it now, either you request what you want and someone will match it or you take someone else's offer. Plenty of money is going around to easily cover what you want to bet. Usually closer to game times there is a lot more money available to bet.Comment -
