Yeah Liver is another big deal for latinos, I myself hate the texture and taste of it... Can't say the same for Chorizo... it's good even if they use tripe... I think it's what's used for making sausage too...

I was the same way when I was a kid, I could only eat the tripe part if it was cut into real small pieces...lol
