Of course, but overall no more or less than those in other professions. Yeah it's a cash business but bookies prepare themselves, they meet in public places, they are usually high on security, often they have runners pick up and deliver. Some rarely leave their home/office, when they do they are armed accordingly. Are they a bigger risk to be arrested? Absolutely. To be killed by Joe Square? Naw, not so likely.
