any real Italo-American will tell you that you never put gravy ("sauce" for non-Italians)
on plain macaroni (a.k.a. "pasta") .. you coat the cooked ALDENTE pasta with the sauce/gravy
so it doesn't STICK and it is thus coated lightly for separation and flavor, then you serve with gravy
and parmesan AND romano.
