I know the defensive midfielders run about 5-7 miles a game. My guess is the refs will run about that too.

A ref will run approximately the same amount as a midfielder, while players on defense run less. So if anything, each ref should be at the upper end of the average, but it also depends on how competitive the game is. Better (or at least more evenly matched) teams will require the ref to run more to stay on the play and in control of the game.
