the apostrophe is to show ownership when it is referring to a noun. It can also join two words together. didn't can't etc..

The professor's book is red.
The professors' books are red.
The professors are red.

1st is singular.
2nd is plural.
3rd means they are drunk.

Its is very different though, that is next lesson.

Abe, I'm a copy editor, so if you're serious, I'll hook you up for all your grammar/spelling/punctuation needs.

Never use an apostrophe to pluralize anything!! It is only to make a word possessive!! The only time you ever use an apostrophe with a plural is if it's something hard to read, like:

Oakland A's
1950's
etc.

And actually, there is debate on whether you'd use it for the above.

So again:

weaknesses
degenerates
Abe's spelling issues
JJ's rug
