Glad to have been of assistance. You know what's funny? Not that long ago -- at least by my standards, say the mid-80s and before -- butchers were practically giving away skirt steak. I can recall dressing out a calf with my abuelito and he'd cut that out, saving about half of it for taco meat and tossing the rest in a bucket to feed to his sheep dogs.

Then Muffy & Todd Yuppy all of the sudden got in line with the rest of the sheep and found this new 'fajita craze' to be just the bomb, driving the demand and price up for what was so long an unpopular cut of beef.

You ever made fish tacos? Let me know and I'll turn you on to a great recipe for the slaw that goes with them.
