Hmmm, I always liked Calgary, must be the Houston connection.

Enchiladas are a pain in the ass to make and messy as hell, secret is to give the corn tortillas a quick bath (like 3-4 seconds) in some hot veggie oil before stuffing and rolling them up. Plain cheese and onions inside corn tortillas are my favorite way to go. We buy the Old El Paso red enchilada sauce as well. Once you get 10-12 rolled up and in the baking dish, pour the sauce on, throw on more cheese and chopped onions, cooked covered for 25 mins, then uncovered for 8-10 more mins.
