its a great question PC, and i'm sure there are a myriad of answers... mostly coming down to coaching staff and philosophy...
but I like the idea that its passed from player to player...
its like a mindset with certain teams... when new guys come in the old guys drill in their brain the pride they have... see it with the steelers too... other then 2 years (this is one of them) in my lifetime ALL winning steeler teams have been big Defense, big run teams.... the team mirrors the blue-collar fan base... they build/draft that way, and scheme that way ect.
why can no bear's team ever have a great QB... why can the dolphins never have a 1200 yard running back...

This Ravens' run is not making Bilick look very good as a head coaching candidate. He had the same defense the last five years and won 0 playoff games and only got to the playoffs twice. Good thing he won his Super Bowl or he wouldn't get any looks.

I agree with Archie, it is a mindset and an expectation. Anyone who steps into any position is expected to play well, and do their job. They also play as a defensive unit, very disciplined, and everyone just does their job to the best of their abilities. Coaching has a big part in their success as well.
