In a large bowl, combine halved fingerling potatoes, baby egg plants, brussel sprouts and endives and garlic cloves. Coat with olive oil, thyme, salt, pepper and smoked paprika. Roast in an oven until golden on 400 degrees.
Place the roasted veggies in a large tortilla with fresh slices of avocado and sun dried tomatoes. Add a generous amount of grated asiago cheese and ground taco meat (pan fried/browned in your fave spices -- cumin, chilis, allspice, etc).
This roasted veggie/beef burrito will have your gal cumming and begging for more. Serve it up with your fave football watchin' snacks.
