Some of the things he does:

1. When I'm driving he'll look at my legs and the way I drive like he's figuring out what I'm doing

2. he's choosy with food, most dogs I've seen will just eat whatever is in their dish but my dog will skip the vegetables and just eat chicken....or if he's hungry later he'll eat the vegetables but all the good stuff is gone first

3. Anytime I bring him to the vet, he starts shaking

4. and if you look into his eyes there's something there like he knows whats up

Plommer, you are probably correct...your dog notices more than you think. I have two and am "molding" them into great personalities. Here is a true story...years ago when my Grandfather died the farm dog would venture off the farm....my Grandmother would get in her car and go look for him...she found him multiple times about a mile or so away in the cemetary standing right over his grave. Freaky....and he was only a "farm dog".
