I see a serious AIR TIGHT MOTHERPHUCKING LOCK tonight in hoops but don't know if I shoud post about it cus after it hts, all you lil kok boys will be talkin' bout how "Buzzy is back" and then I'll phucken start this shit up again. Did this one last night, Willie. Slice a firm eggplant into 1/2" thick medallions and gently brown them off in olive oil, garlic, shallots and a couple bay leaves. Salt n pepper em to taste. Place half the medallions on a baking sheet and layer on top of each a thick slice of fresh monzarella cheese, prosciuto and couscous. Place the other half of the medallions on top and pop the eggplant sandwiches in a 400 degree oven till the cheese melts. Place the eggplant sandwiches on a bed of penne pasta and drizzle pesto (any kind you like) over the top and hit it with a little olive oil and fresh grated parmesan. Phucken blew my wad.
