Where do the number come from when looking at the live odds?

The differ from the numbers at covers.

Is it the percentage from people betting at sbr?

If you are referring to sbrodds, they are sourced from 5Dimes. Covers consensus numbers I think are just the percentages from the users there on the free picks, aka irreverent.
