Just got done making 120 cannoloni and freezing them made my own pasta and mixture and rolled them all up sauteed mushrooms and chopped spinach and ground beef 85% and seasonings and put them all together. Then after they freeze, i bag them in dozens and have ready food in the freezer. Tomorrow my project will be homemade gnocchi (maybe 10 lbs)

yes i was a chef and then became disabled but i do alot of stuff around the house to make sure we are stocked with meals and also i have friends and neighbors who like to get dozens of this and dozens of that when i got them besides all the freakin cookie trays they want for the holidays. i can do these at my conveince because i surely cant stand on my feet for 12 hours a day anymore. most of the stuff i did over the years, i wrote everything down and a couple of years ago, i put it into book form. i been making homemade pasta since i was 3 and making wine since then too when my grandparents. i remember rolling my dough by hand and cutting it by hand
got all the stuff including chaffing dishes to do banquets or buffets up to 200 just gotto rent a hall if i want to do something like that again
