They didn't use to, but I know any book run by William Hill now does. You should look up which ones they're in.
But I'm pretty sure they still skate on prelims for lesser shows from time to time, so beware. But at least they do parleys which some books won't, so be aware of that, too.
Also, Station-owned casinos don't do MMA bets because they own the UFC.Comment -

the will hill books in vegas seem to offer most odds on mma, than westgate... there's a couple will hills downtown at 4 queens, and one in behind ballys at ellis island, and one by mgm/tropicana at hooters...Comment
