PS. Miss you doods, but I work like... eh... 14 hours a day? or some shit. Hard even to get days off to watch the fight, bleh. Anywho, in the spirit of the old Alex Careres thread, heres some cookin shit.
Pan seared tenderloin basted in thyme and garlic butter, braised pulled shortrib pressed in potato pave, herb puree, herb puree, grilled asparagus, seared king oyster mushSHROOM, foie gras jumbo ravioli, reduced truffle jus.
Seared sablefish, grilled artichoke, sauteed zalamata olives, zucchini and sundried tomato, roasted garlic chickpea puree, topped with a fresh "salsa" of watercress, sliced caper berries and shallots in spicy red wine vinaigrette.
So basically what we are seeing here is about a day and a half into the creation of this sauce. Step 1: caramelize sugar in a slightly acidic liquid. Step 2: make a gastrique out of rice wine vinegar. Step 3: throw in some rice wine and let the ************ cook down quite a bit. Step 4: Hit it with some pitted umeboshi plums, a ton sudachi juice, mirin, a bit of orange, and drown it in beef remiage and fish stock, reduce the living hell out of it on low heat for around 2 days. Step 5: strain after reduced and cool until it becomes a near glaze. To be served on seared scallops and compressed braised beef tongue with endive and other nummy side dishes.
Cook hard, gamble hard, bitz0rz. Hope you are all killin it.

Yeah but apparently some of the sites don't even collect the bitcoin debt properly... there's an article in this month's GQ about buying Bitcoin and trying to spend it online (gambling sites, silk road, overstock.com) and IRL (like at a resto promoting the currency for nerd notoriety).
