Everyone raves on about how great the betting exchange is, but how exactly does it work? What are the wager limits for beginners and pros?

well, first, why did you put 188bet and bet365 in the thread title?
those are regular bookies, not exchanges.
Betfair is an exchange and they don't have any kind of limit of how much you want to bet in a match.
As an exchange, you can bet on the money offered by other users in the market, that is the limit, once you matched all those money offered, you can put additional bets with the odds you want for other users to match, it can be matched if the odds are equivalent too or it won't be matched.
And where are you from?
